Amazing Mini Quiches

So a while ago I saw a recipe for a quiche (or was it a frittata) and they said that you could cut it up and freeze it.  Well that got me to thing -a dangerous past time I know- what if I just made them in cupcakes!  So here is the recipie:

Minutes to Prepare: 5
Minutes to Cook: 15
Number of Servings: 6


12 Tater Tots
1/2 cup fresh spinach
1/3 cup Colby and Monterey Jack shredded cheese
4 eggs scrambled (little water for fluff)
Turkey bacon*


Coat a muffin tin with with oil and pre heat oven to 350.
Add all the ingredients equally.
Bake for 15 minutes at 350
