Balasmic Pork Chop w/ Cheddar Potatoes and Broccoli

This is a variation of a recipe I found in Fitness Magazine

Balasmic Pork Chop w/ Potatoes and Broccoli

3 oz pork chop

1 red potato cut into cubes

1 tsp oil

2 cups broccoli florets

1 tbsp Balsamic Vinaigrette

3 tbsp shredded Colby Jack Cheese (or cheddar)

 

Directions:

Preheat oven to 350 degrees F.

Coat potatoes with oil.

Coat pork chop with Vinaigrette.

Mist baking sheet and top with pork chop, broccoli, and potatoes

Add a dash of salt and pepper and bake for 30 minutes.

Top potatoes with cheese and return to oven for 3-5 minutes until cheese is melted.
