Chicken with red Beans and Rice

SO this week I was very productive…well technically it was last week I just didn’t post this like I was supposed to so I guess I wasn’t too productive after all. ANYWHO! I half cooked up some meals and put them in the freezer in a disposable baking aluminum pan. The plan is that I can put the meal in the oven before leaving to go to work. I set the over to start around that time that I am leaving and come home to a cooked meal that just needs to be put on a plate. Genius right! Well here is the first of my delish recipes.

Chicken with Red Beans and Rice

Ingredients:

Olive Oil

Chicken Broth

1/4 c rice (I used wild rice)

1/2 can red beans

1 chicken breast

minced garlic

chopped onion

Cajun Seasoning *see below*

1.) Saute garlic and onion in the olive oil.  Careful not to burn the onion.

2.) Add chicken and brown on both sides. Set chicken aside

3.) Add rice, broth, beans and seasoning.  Allow to simmer uncover a few minutes.

Cajun Seasoning: Season Salt, Onion, Garlic, Black Pepper, Cayenne Pepper, Crushed Red Pepper, Chili Powder, & Paprika

Remove from heat and place in aluminum pan.

When ready to eat bake covered for 30 minutes at 350*

Chef’s Notes: I later added some green beans to it to add a vegetable.

Chef Notes: I made the same dish with a pork chop instead and it was amazing!

Chef Notes: By a whim I sprinkled a little dash of cinnamon while the beans and rice were simmering.  The rice almost did not make it into the pan.
